Marinated Shrimp with Jalapeño Vegetable Sauté


The Litehouse Sesame Ginger Dressing is used as both a marinade and a sauce. To add a little kick and a citrus twist to this classic sauté, try it with our Green Garden Orange Miso Dressing.

INGREDIENTS

  • 2 dozen fresh large shrimp, peeled & deveined

  • 1/2 jalapeño, seeded and minced

  • 1 ½ cup napa cabbage, shredded

  • 1 cup fresh snow peas, sliced

  • ¾ cup carrots, shredded

  • ½ cup scallions, sliced

  • 1 cup Litehouse® Sesame Ginger dressing or Green Garden Orange Miso Vinaigrette

  • Olive oil

  • Salt & pepper to taste

DIRECTIONS

Pour ¼ cup of Litehouse® dressing in bowl with shrimp and allow to marinate for 1 hour. Heat grill or sauté pan over high heat. Add 1 Tbsp. of olive oil to pan and cook shrimp for 2-3 minutes per side and reserve. Add jalapeño, carrots, cabbage and scallion to hot pan. Season lightly with salt and pepper, toss well for 2 minutes and turn off heat. Place warm vegetables in a bowl with the sliced peas. Combine with ¼ cup of Litehouse® dressing. Place vegetable sauté on plate and top with cooked shrimp. Serve additional dressing on side.
